Warm ham hock & quails egg terrine served with a pickled carrot & cucumber salad and lightly scented truffle hollandaise

Fish Course

Pan-fried sablefish with a caramelized shallot & spiced red wine sauce, seared asparagus, pomme puree and chanterelle mushrooms

Herb and parmesan crusted lamb cutlet pan-fried lamb rump and red wine and rosemary braised shoulder served with minted pea pure and sautéed sweet potato
